The Regional Culinary Manager provides culinary leadership and operational support for the Prepared Foods, Cheese, and Sushi departments across 12 locations in NoCal and SoCal. This role is responsible for recipe development, menu execution, team training, and ensuring compliance with company standards for ingredient quality, food safety, and guest experience.

Key Responsibilities

  • Lead culinary operations for Prepared Foods, Cheese, and Sushi departments to achieve quality, sales, and profitability goals.
  • Develop menus and recipes that align with natural, organic, and diet-friendly standards.
  • Standardize recipes and production processes across all locations.
  • Partner with senior leadership and category managers on ingredient sourcing, costing, promotions, and seasonal programs.
  • Collaborate with store and central kitchen teams to ensure consistent execution of production plans, menu quality, and catering programs.
  • Provide training, coaching, and mentorship to store kitchen teams and field specialists.
  • Oversee food safety compliance and ensure all teams meet sanitation and regulatory standards.
  • Support new store planning, including kitchen design and initiatives.
  • Monitor customer trends, gather insights, and recommend strategies to enhance product offerings.

Qualifications

  • Preferred Bachelor’s degree in Culinary Arts, Food Service & Hospitality Management, or equivalent experience.
  • 5+ years of professional culinary leadership experience, managing diverse culinary teams and including extensive scratch cooking and recipe/menu development.
  • Strong understanding of natural, organic, and dietary-specific foods (vegan, gluten-free, allergen-conscious).
  • Solid knowledge of food safety regulations, HACCP, and sanitation protocols.
  • Proven ability to lead, coach, and develop teams in a fast-paced environment.
  • Proficiency in Microsoft Office (Excel required) and recipe database management systems.
  • Excellent communication, strategic thinking, and problem-solving skills.
  • Flexible schedule to meet business needs; valid Food Handler’s card and ServSafe certification required.
  • Must be open to travel between Northern and Southern CA
