We are seeking an experienced Chef de Cuisine to lead day-to-day kitchen operations for a respected, high-volume restaurant group rooted in classic steakhouse execution. This is a hands-on leadership role for a disciplined culinary professional who values structure, consistency, and team development.
The ideal candidate brings strong operational instincts, a deep understanding of steakhouse fundamentals, and the ability to lead a large back-of-house team calmly and effectively through high-demand service.
What You’ll Do
- Lead, train, and schedule a large back-of-house team across multiple service areas
- Ensure consistent execution of menus, butcher programs, and plating standards
- Maintain daily kitchen systems, including line checks, tastings, temperature logs, and allergen controls
- Oversee all butchery practices with a focus on yield, portioning, safety, and waste reduction
- Manage receiving, storage, inventory, and cold-chain procedures
- Partner closely with the General Manager on food cost, labor planning, scheduling, and vendor relationships
- Maintain health, safety, and sanitation compliance
- Set the tone for professionalism, accountability, and teamwork throughout the kitchen
What We’re Looking For
- 5–7+ years of progressive kitchen leadership in a steakhouse or high-volume environment
- Hands-on experience with butchery, portion control, yield management, and doneness standards
- Proven ability to implement systems that drive consistency across shifts and teams
- Strong expediting skills and clear communication with both BOH and FOH teams
- Solid understanding of food cost, labor management, and waste control
- Working knowledge of NYC DOHMH standards; ServSafe certification required (or ability to obtain)
- Calm, direct leadership style with a focus on training and development
- Culinary degree preferred or equivalent professional experience
- New Restaurant Opening experience a plus!
