We are a resort hotel in north San Diego County, with a celebrated culinary program that is looking for an Executive Sous Chef to complement the Executive Chef in the operation. This person must have exceptional business acumen and the ability to cost recipes, menu items, menus, outlets, and service programs, schedule the team to a budget, manage the sous chefs, and ensure consistency in the products.

Executive Sous Chef Qualifications:

  • 4 years experience as Executive Chef, Executive Sous Chef, CDC, or Sous chef in a luxury hotel or resort setting
  • Strong administrative abilities including recipe and menu costing, menu costing, invoice coding, scheduling, and other computer tasks
  • 2+ Years experience with high-end banquets
  • Strong technical cooking abilities, ability to teach and demonstrate methods and expectations
  • Progressive and positive management style

Executive Sous Chef Responsibilities:

  • Manage the administrative side of the culinary program including maintaining the recipe and menu costings, managing the sous chefs, and managing the scheduling
  • Work the line or banquet program as necessary for operational success
  • Interview, hire, and onboard culinary associates with progressive management techniques
  • Purchase goods from vendors and maintain order guides
  • Manage inventory and kitchen cleanliness
