More Than a Beverage: What the Premium NA Movement Says About Hospitality

The evolution of premium non-alcoholic (NA) beverages is one of the most interesting developments in the global beverage industry. North America has experienced dramatic growth, driven by the wellness movement, the sober-curious movement, and consumers who want premium experiences without alcohol.
What the premium NA movement says about hospitality is that it’s more than a beverage! Once an afterthought, premium NA is now one of the beverage sector’s most dynamic categories.
Major brewers, distillers, and startups have expanded their premium NA portfolios, and thoughtfully crafted non-alcoholic drinks have earned a place on the menus of restaurants, bars, hotels, and retail shelves – not as substitutes, but as intentional choices.
As someone who spent much of my career building beverage programs, I’ve had the opportunity to watch this evolution. Today, as a talent recruiter in the hospitality space, I see growing demand for beverage professionals who can collaborate with leaders and teams and make this now-mainstream shift a draw for hospitality operators.
What’s in the mix of a successful premium NA strategy?
Creating a premium non-alcoholic brand takes more than developing a great product. It requires innovation, craftsmanship, storytelling, and an incredible amount of education about current consumer consumption behaviors and expectations.
It means challenging long-held assumptions about what belongs on a beverage menu – and expanding the conversation around what a great guest experience can look like.
The conversation has indeed evolved, right alongside the surge of new non-alcoholic products. It’s no longer just about what’s in the glass or in cans. It’s about creating a more personalized experience where every guest feels equally considered.

For years, beverage programs were designed around the assumption that every guest wanted a glass of wine, a cocktail, or a beer. But drinking cultures have changed.
Today, the best operators recognize that hospitality has never been about steering guests toward a particular choice. It’s about understanding what guests are looking for and creating an experience that makes them feel welcome.
Whether someone orders a cocktail, a glass of champagne, or a premium non-alcoholic craft beer, the goal is the same: to create an experience that feels intentional, memorable, and inclusive.
That’s not a beverage trend.

The more time I spend talking with founders, operators, and professionals in the hospitality community, the more I notice that the strongest brands share a similar mindset:

What stands out most to me is not how the premium non-alcoholic beverage movement has grown, but who is driving it. Having spent a career in beverage, I find myself thinking less about where the category is headed and more about the people shaping it.
Because while great products create interest, it’s the people behind them who build trust, challenge convention, and ultimately move an industry forward. To me, that’s what makes this movement so compelling.
