Sous Chef – Upscale Italian Dining | Franklin, TN

Busy, high-volume upscale Italian restaurant in Franklin is seeking a talented Sous Chef to lead in a fast-paced, professional kitchen. Sous Chef Benefits & Compensation:

$65,000–$75,000 salary
100% employer-paid health insurance after 90 days

Sous Chef Requirements:

2+ years as a Sous Chef or in a comparable leadership role
Upscale or fine dining experience required; Italian cuisine background preferred with a passion for Italian food essential
High-volume experience handling 800–1,000 covers per night and $8M–$10M in annual sales
Skilled in scheduling, ordering, and inventory control
Stable work history with open availability

Sous Chef Must Haves:

Lead, train, and inspire kitchen staff in a high-performance environment
Consistently execute dishes to exacting standards during peak service
Collaborate with the Executive Chef on menus and specials
Maintain strict food safety and sanitation standards
Manage labor and food costs while upholding quality

Sous Chef Preferred:

Experience in scratch kitchens with complex menus
Knowledge of authentic Italian cooking techniques
ServSafe or equivalent certification
Background in opening restaurants and implementing systems
