Head Baker Requirements & Qualifications

  • Completion of a culinary school program or apprenticeship preferred
  • 2–4 years of professional baking experience preferred
  • Experience with mixing, bench work, proofing, and baking bread
  • Experience with laminated doughs for pastry production
  • Knowledge of Scandinavian or European bread traditions is a strong plus
  • Ability to work overnight shifts, weekends, and some holidays
  • Ability to lift 50+ lbs without restrictions and stand/bend for extended periods
  • Strict adherence to health, safety, and food handling standards
  • Dependable, hardworking, and committed to team collaboration

Head Baker Preferred Background & Skills

  • Positive, solution-oriented mindset
  • Strong sense of urgency and excellent time management
  • Basic math proficiency

Head Baker Day-to-Day Responsibilities

  • Oversee daily production of artisan breads, ryes, rolls, and laminated dough pastries using traditional techniques
  • Manage, schedule, and train a team of up to six bakers
  • Monitor and maintain product quality, making necessary adjustments to baking processes
  • Organize and ensure cleanliness of dry storage and refrigerated areas
  • Receive and verify deliveries, monitor inventory, and properly label/store all ingredients
  • Ensure strict compliance with health, safety, and food safety standards
