Sous Chef Requirements & Qualifications
- Minimum 2-3+ years of high-volume, upscale, or fine dining kitchen experience
- Proven success as a Sous Chef or higher in a fine dining environment with at least $10M+ annual sales volume (ideally $15M+)
- Solid tenures with chef-driven concepts; able to demonstrate stability and commitment
- Experience managing a large team
- Strong background with fresh seafood
- Familiarity with James Beard or Michelin-starred kitchens highly valued
- Proficiency with POS systems, Microsoft, and Google suites
- Able to remain composed and effective under pressure, managing long shifts
- Stage and tasting required as part of the interview process
Sous Chef Day-to-Day Responsibilities
- Lead kitchen execution, ensuring all dishes meet fine dining standards for quality, consistency, and presentation
- Supervise, mentor, and develop line cooks and prep teams
- Foster a culture of accountability, professionalism, and continuous improvement
- Oversee daily line checks, tastings, and strict recipe adherence
- Collaborate on menu development, seasonal changes, and special events
- Manage inventory, ordering, product utilization, and food cost controls
- Uphold health, safety, and sanitation compliance at all times
- Facilitate seamless communication and collaboration with front-of-house leadership
