Sous Chef Requirements & Qualifications

  • Minimum 2-3+ years of high-volume, upscale, or fine dining kitchen experience
  • Proven success as a Sous Chef or higher in a fine dining environment with at least $10M+ annual sales volume (ideally $15M+)
  • Solid tenures with chef-driven concepts; able to demonstrate stability and commitment
  • Experience managing a large team
  • Strong background with fresh seafood
  • Familiarity with James Beard or Michelin-starred kitchens highly valued
  • Proficiency with POS systems, Microsoft, and Google suites
  • Able to remain composed and effective under pressure, managing long shifts
  • Stage and tasting required as part of the interview process

Sous Chef Day-to-Day Responsibilities

  • Lead kitchen execution, ensuring all dishes meet fine dining standards for quality, consistency, and presentation
  • Supervise, mentor, and develop line cooks and prep teams
  • Foster a culture of accountability, professionalism, and continuous improvement
  • Oversee daily line checks, tastings, and strict recipe adherence
  • Collaborate on menu development, seasonal changes, and special events
  • Manage inventory, ordering, product utilization, and food cost controls
  • Uphold health, safety, and sanitation compliance at all times
  • Facilitate seamless communication and collaboration with front-of-house leadership
