Director of Bakery Operations Requirements & Qualifications

  • Strong professional baking background, ideally as a pastry chef or senior bakery professional
  • Deep understanding of baking science, dough fermentation, and production troubleshooting
  • Proven leadership experience in bakery, pastry, or food production operations
  • Background in independent or owner-operated businesses preferred
  • Experience with financial management including COGS, labor control, and purchasing
  • Proficiency in Microsoft Office, scheduling platforms, and digital communication tools
  • Ability to lift 50+ pounds and stand for extended periods

Director of Bakery Operations Preferred Background & Skills

  • Experience developing and launching new bakery products
  • Skilled in menu optimization and product mix analysis
  • Familiarity with clean-label or additive-free ingredient sourcing

Director of Bakery Operations Day-to-Day Responsibilities

  • Oversee all bakery production, packaging, savory offerings, and delivery logistics
  • Lead, train, and develop a diverse bakery team, fostering collaboration and high performance
  • Manage inventory, purchasing, vendor relationships, and ensure optimal product availability
  • Develop production schedules and align workforce management with business needs
  • Monitor financial performance, identify cost-saving opportunities, and drive strategic growth
  • Maintain rigorous food safety, sanitation, and cleanliness standards
  • Collaborate with leadership on brand development, menu enhancements, and exciting product launches
