Sushi Chef – Chicago, IL

This position offers the chance to work across both Oak Brook and Chicago locations, with support for transportation between sites.

Sushi Chef Requirements & Qualifications

  • Minimum 3 years of professional sushi experience preferred
  • Strong knife skills and experience with fish fabrication
  • Skilled in preparing nigiri, sashimi, maki, and other sushi preparations
  • In-depth knowledge of fish handling, storage, sanitation, and food safety
  • Sharp attention to product quality, portioning, and presentation
  • Ability to maintain speed and accuracy during high-volume service
  • Clean, organized, and professional approach to the station
  • Collaborative team player with excellent communication skills
  • Upscale or fine-dining Japanese restaurant experience strongly preferred

  • Eager to learn and open to training, even if not all skills are mastered
  • Consistent, dependable work ethic
  • Desire to build a long-term culinary career

Sushi Chef Day-to-Day Responsibilities

  • Prepare high-quality sushi and sashimi according to established standards
  • Fabricate fish and manage daily product rotation and storage
  • Set up and break down the sushi station, maintaining strict cleanliness and organization
  • Execute nigiri, sashimi, and maki production with precision and consistency
  • Monitor and ensure freshness, quality, and proper sanitation
  • Engage with guests at the sushi bar, delivering genuine hospitality and product knowledge
