Sous Chef Requirements & Qualifications

  • Minimum 3 years of culinary management experience in high volume scratch kitchen.
  • Highly proficient with cooking appliances and advanced knowledge of culinary techniques.
  • Knowledge of par levels and best ordering practices, with effective inventory management skills.
  • Basic understanding of financial implications, including P&L, COGs, labor, and operational excellence.
  • NYC Food Handlers Certificate
  • Basic understanding of Microsoft Office and Excel.
  • Strong leadership abilities, including clear vision, active listening, and assertive communication.

Sous Chef Preferred Background & Skills

  • Intuitive understanding of restaurant service.
  • Extensive food knowledge.
  • Ability to organize, prioritize, and plan ahead.
  • Motivated by a strong internal drive to achieve success and dedicated to delivering high-quality work.

Sous Chef Day-to-Day Responsibilities

  • Maintain the highest standards of food quality and guest satisfaction.
  • Train, develop, and retain top-tier talent, fostering a team dedicated to culinary excellence.
  • Collaborate closely with the Chef de Cuisine to meet Back of House targets and facilitate smooth kitchen operations.
  • Support compliance with health regulations to ensure top grades in inspections.
  • Manage inventory levels effectively while maintaining high attention to ingredient quality.
