Vice President of Commissary Operations – Brooklyn, NY
A rapidly growing, founder-led grocery and hospitality organization is seeking an entrepreneurial and operationally rigorous Vice President of Commissary Operations to lead and scale its commissary, culinary production, logistics, and prepared foods functions. Vice President of Commissary Operations Requirements & Qualifications
- 15+ years of operations leadership within commissary, food production, grocery, hospitality, or prepared foods environments
- Proven executive-level management of operational P&L, labor, food cost, inventory, and production KPIs
- Extensive experience scaling commissary kitchens, production facilities, or multi-unit food operations
- Deep expertise in perishable food production, food safety regulations, logistics, and quality control
- Strong systems mindset and experience implementing SOPs and operational infrastructure
- Demonstrated success leading large, multidisciplinary teams across diverse operational functions
- Bachelor’s degree in business, operations management, hospitality, culinary operations, or related field preferred
Vice President of Commissary Operations Preferred Background & Skills
- Experience with founder-led, entrepreneurial, or high-growth organizations
- Executive presence and excellent communication skills
- Advanced financial acumen, forecasting, and data analysis abilities
Vice President of Commissary Operations Day-to-Day Responsibilities
- Oversee all commissary operations, including culinary production, prepared foods, catering support, inventory, and logistics
- Build, refine, and implement scalable SOPs across production, quality assurance, food safety, and operational workflows
- Lead relationship management and sourcing strategies with local, organic, and ethical vendors
- Drive operational excellence focused on efficiency, premium product quality, and team culture
- Develop and execute multi-year operational roadmaps, supporting future facility expansion and increased capabilities
- Mentor, develop, and support a high-performing commissary and culinary team, fostering collaboration and accountability
