Bakery Production Manager

A growing café and bakery group is seeking a skilled bakery production manager to lead high-volume artisan bread production for multiple retail locations. Bakery Production Manager Requirements & Qualifications

  • 10+ years of artisan bread production experience in a high-volume commercial bakery
  • Proven experience leading, training, and developing bakery production teams
  • Experience supporting multiple retail locations via centralized production/commissary
  • Strong technical expertise in artisan bread production and commercial baking
  • Demonstrated ability to build efficient, organized, and consistent production systems
  • Deep knowledge of inventory management, production forecasting, and waste/labor efficiency
  • ServSafe, HACCP, or equivalent food safety certification
  • Strong communication and cross-functional collaboration skills

Bakery Production Manager Preferred Background & Skills

  • Ability to analyze operational and production data for process improvements
  • Familiarity with creating and refining SOPs for team onboarding and efficiency
  • Experience with production planning, detailed scheduling, and resource allocation

Bakery Production Manager Day-to-Day Responsibilities

  • Oversee daily artisan bread production across all shifts, ensuring quality and consistency
  • Apply expertise in fermentation, mixing, shaping, proofing, and baking a range of breads
  • Recruit, train, schedule, and develop bakers, shift leads, and production staff
  • Develop and maintain systems for inventory, ordering, forecasting, and scheduling
  • Troubleshoot technical baking challenges and optimize yields and efficiency
  • Conduct regular product evaluations and uphold food safety and sanitation standards
  • Build a productive, accountable, and team-oriented culture while driving continuous improvement
