Chef de Cuisine – High-Volume Upscale Restaurant

We’re looking for a hands-on Chef de Cuisine who knows how to run volume—someone comfortable leading a busy kitchen, developing a team, managing costs, and maintaining consistency during demanding services. If you’ve built your career with a high-volume upscale restaurant group where strong systems, scratch cooking, execution, and leadership matter, this could be an excellent next step.
This role is ideal for a chef who enjoys being on the floor and on the line with the team—not managing from an office—and who understands how to balance culinary quality with the operational discipline required to run a successful restaurant.
What You’ll Do:
- Lead high-volume daily kitchen operations with organization, urgency, and consistency
- Work side-by-side with the culinary team during peak service periods
- Ensure every dish meets established standards for quality, presentation, and execution
- Recruit, train, coach, and develop a strong back-of-house team
- Build effective schedules and manage labor to business levels
- Monitor food cost, inventory, purchasing, waste, and portion controls
- Maintain exceptional cleanliness, sanitation, food safety, and kitchen organization
- Drive prep systems and operational processes that allow the kitchen to execute efficiently at volume
- Partner closely with restaurant and hospitality leadership to deliver an outstanding guest experience
What We’re Looking For:
- 4+ years of progressive culinary leadership in a high-volume upscale, polished casual, or fine-dining scratch kitchen
- Experience in a structured, standards-driven restaurant environment strongly preferred
- Proven ability to lead significant volume while maintaining quality and consistency
- Strong people leadership with a track record of training and developing cooks and sous chefs
- Solid understanding of food cost, labor management, inventory, purchasing, and operational controls
- Highly organized, accountable, and comfortable working within established systems and procedures
- Strong sanitation and food safety standards
- A chef who is visible, engaged, and willing to jump in wherever needed
- Culinary degree preferred but not required
