Bakery Production Manager Requirements & Qualifications
- 10+ years of artisan bread production experience in a high-volume commercial bakery
- Proven experience leading, training, and developing bakery production teams
- Experience supporting multiple retail locations via centralized production/commissary
- Strong technical expertise in artisan bread production and commercial baking
- Demonstrated ability to build efficient, organized, and consistent production systems
- Deep knowledge of inventory management, production forecasting, and waste/labor efficiency
- ServSafe, HACCP, or equivalent food safety certification
- Strong communication and cross-functional collaboration skills
Bakery Production Manager Preferred Background & Skills
- Ability to analyze operational and production data for process improvements
- Familiarity with creating and refining SOPs for team onboarding and efficiency
- Experience with production planning, detailed scheduling, and resource allocation
Bakery Production Manager Day-to-Day Responsibilities
- Oversee daily artisan bread production across all shifts, ensuring quality and consistency
- Apply expertise in fermentation, mixing, shaping, proofing, and baking a range of breads
- Recruit, train, schedule, and develop bakers, shift leads, and production staff
- Develop and maintain systems for inventory, ordering, forecasting, and scheduling
- Troubleshoot technical baking challenges and optimize yields and efficiency
- Conduct regular product evaluations and uphold food safety and sanitation standards
- Build a productive, accountable, and team-oriented culture while driving continuous improvement
