We are seeking a Director of Sushi Operations to lead and elevate the sushi program across six locations. We are a neighborhood fish and seafood market with a robust sushi program featuring the highest quality ingredients available. We're looking for a creative, strategic culinary leader with a strong background in sushi to drive innovation, maintain exceptional quality standards, and build a best-in-class sushi team.
The role is located in Connecticut.

Qualifications + Requirements
- 3+ years of sushi experience in high-quality or premium dining environments
- 3+ years of management experience in culinary or restaurant operations
- Skilled in recipe and cost management (database oversight, recipe review and consistency, vendor relationships, etc)
- Strong network within the sushi chef community with the ability to recruit top talent
- Proven leadership managing multi-unit or high-volume kitchen teams
- Experience with vendor negotiations, ingredient sourcing, and cost management
- Strong strategic thinking, operational planning, and project management skills
- Deep understanding of sushi preparation standards, quality control, and food safety
Responsibilities of the Role
- Lead sushi operations across six locations, ensuring consistency, quality, and efficiency
- Recruit, develop, and mentor sushi chefs while building a strong culinary team
- Maintain rigorous standards for ingredient quality, technique, and presentation
- Develop new menu offerings and drive ongoing innovation within the sushi program
- Manage vendor relationships and negotiate sourcing for premium ingredients
- Implement operational improvements to increase efficiency and reduce waste
- Partner with leadership on new initiatives, product launches, and growth opportunities
