Executive Chef – Coastal Mediterranean Concept | Las Vegas, NV
This is an opportunity to lead the kitchen of a bold, wood-fired Mediterranean concept backed by experienced operators and located within a major Las Vegas casino resort. The 300-seat restaurant will celebrate the vibrant, coastal cuisines of Turkey, Israel, and Greece in a refined yet approachable setting.

Executive Chef Requirements & Qualifications:
- Minimum 2–3 years as Executive Chef leading full-scale BOH operations
- Deep working knowledge of Turkish, Israeli, and Greek cuisines, with an emphasis on wood-fired technique and coastal flavor profiles
- Experience managing high-volume kitchens while maintaining refined execution
- Proven ability to build and mentor large teams, including recruiting, training, and leadership development
- Confident and presentable — must be comfortable as a public-facing representative of the brand, including media or VIP visibility
- Familiarity with large hotel or casino operations, including navigating internal systems, compliance, and union dynamics
- Will report directly to the Culinary Director and collaborate closely with ownership on menu development and kitchen operations
- Culinary degree or equivalent hands-on professional training
Executive Chef Preferred Background & Skills:
- Background in opening restaurants, especially within a hotel or casino setting
- Experience developing menus that balance regional authenticity with broad guest appeal
- Calm and flexible leadership style; thrives in collaborative, dynamic environments
- Previous experience working within highly structured or layered management systems
- Ability to integrate seasonal and local ingredients into a consistent, scalable food program
- Strong organizational and systems-thinking skills related to kitchen design, flow, inventory, and vendor management
