We are seeking a dynamic and talented Chef de Cuisine to lead our culinary team. Reporting to the Executive Chef and General Manager, the Chef de Cuisine will oversee all kitchen operations, drive menu innovation, and uphold our reputation for excellence in Japanese cuisine. This role demands creativity, leadership, and a passion for delivering unparalleled dining experiences.

Chef de Cuisine Qualifications:

 

·       5 years’ experience in high-volume, food-focused, or chef-driven upscale restaurants 

·       At least 2 years in a Senior Sous, Chef de Cuisine, or Executive Sous Chef role 

·       Expertise in Japanese cuisine, including robata and sushi preparation: Preferred 

·       Proven ability to manage and mentor diverse kitchen teams 

·       Food Safety Manager certification: Preferred 

·       Ability to work evenings, weekends, and holidays

 

Chef de Cuisine Preferred Background:

 

·       Culinary degree or equivalent professional training 

·       Experience with rare ingredients like Japanese Wagyu and Kobe beef 

·       Strong financial acumen in controlling food costs and inventory 

·       Knowledge of Chicago health and sanitation regulations 

·       Track record of creating innovative, seasonal Japanese menus 

·       Familiarity with omakase and chef-counter dining experiences
