Prep Supervisor – Commissary Operations

We are seeking an experienced Prep Supervisor to oversee daily prep and batch production within a growing central commissary facility. This is a hands-on leadership role responsible for organizing production, assigning team members, maintaining inventory and par levels, ensuring quality and food safety, and keeping production on schedule.
The ideal candidate has experience in a high-volume kitchen, commissary, food production, QSR, or multi-unit food-service environment and is comfortable leading a team in a fast-paced operation.
Key Responsibilities
- Oversee daily prep and batch production to ensure products are completed accurately, safely, and on schedule.
- Review inventory and par levels to determine daily production needs and prevent shortages.
- Assign prep and production tasks based on staffing, inventory, production priorities, and deadlines.
- Maintain appropriate par levels for batch-produced items and support production needs for satellite locations.
- Monitor production throughout the shift and adjust assignments and priorities as needed.
- Ensure recipes, prep procedures, portioning, yields, and production specifications are consistently followed.
- Conduct quality-control checks and ensure products meet company standards before release or distribution.
- Monitor products for consistency in taste, texture, appearance, portioning, and overall quality.
- Ensure proper labeling, dating, storage, rotation, cooling, and handling of prepared foods.
- Maintain compliance with food safety, sanitation, and personal hygiene standards.
- Assign daily responsibilities, provide real-time coaching, and hold team members accountable for productivity, quality, and food safety.
- Track production performance and key metrics, identify gaps, and take corrective action when appropriate.
- Communicate production delays, staffing issues, inventory shortages, equipment problems, or quality concerns to the Production Manager.
- Maintain an organized, efficient, and accountable production environment.
- Collaborate with Production, Culinary, Procurement, Distribution, and Operations teams to support daily production and company growth.
Qualifications
- Previous experience in food production, commissary, commercial kitchen, QSR, or high-volume food-service operations.
- Previous supervisory or team-lead experience preferred.
- Strong understanding of food safety, sanitation, prep, batch production, and inventory management.
- Ability to read, follow, and enforce standardized recipes and production specifications.
- Experience working with production targets, KPIs, or performance metrics is a plus.
- Strong organizational, planning, communication, and problem-solving skills.
- Ability to prioritize multiple production needs and deadlines in a fast-paced environment.
- Comfortable coaching and directing a production team.
- Ability to identify operational issues, resolve problems within scope, and escalate when necessary.
- Comfortable using inventory, scheduling, production, and reporting systems.
- Ability to work collaboratively across multiple departments.
- Flexibility to work varying schedules, including evenings and weekends as operationally needed.
Compensation: $67,000–$75,000 annually, based on experience.
