Commissary Catering Sous Chef Requirements
- High volume experience of $5-Million Annually
- At least 3 years in a similar role
- Highly organized, driven, and professional
- Hands on with a coach-player mentality
- Wiliness to work early morning hours
Commissary Catering Sous Chef Responsibilities
- Hands on preparation and execution of off-site catering items in accordance with BEOs, ensuring food quality and presentation standards are maintained in varied environments
- Come up with creative menu options, locations, ensuring all equipment, supplies, and food items are properly packed, transported, and reassemble
- Supervise and support prep and line cooks, delegating tasks and ensuring timely and coordinated execution, including scheduling, ordering, and providing accountability
- Uphold food safety, sanitation, and health standards during transport and service in non-traditional kitchen settings
- Respond quickly to on-site challenges, adjusting prep or execution methods based on space, timing, or equipment limitations
