Food and Beverage Cost Controller – Relocate to Cayman Islands

Job Summary

Our client, an ultra-luxury resort in the Cayman Islands, is seeking a well-tenured F&B Cost Controller to work with their award-winning culinary and restaurant teams. If you are a fanatic for finding efficiencies in F&B procurement, inventory, and pricing, we want to hear from you today.

Food and Beverage Cost Controller Responsibilities:

  • Control the Food and Beverage outlets in terms of wastage, pilferage, and efficiency
  • Prepare variance analysis for food & beverage and communicate with relevant parties
  • Check and verify systems transactions/operations (POS, discounts, staff meals, settlements, lost postings, pricing, etc.)
  • Check the cost of sales in all F&B outlets and ensure that costs are within budget
  • Continuously study weaknesses in F&B control implemented and provide suggestions for improvements
  • Conduct surprise spot checks at all F&B outlets
  • Participate in inventory taking at all F&B outlets
  • Check and ensure that no material is issued out from the store without requisition or approval from the respective department head
  • Coordinate with restaurant management and finance to sort out cost issues pertaining to F&B

Food and Beverage Cost Controller Requirements

  • Previous experience as a Food and Beverage Cost Controller is required
  • Experience working at independent luxury resorts or hotels is strongly preferred
  • Strong tenure in previous positions is strongly preferred
  • Experience working and living in the Caribbean is strongly preferred
